Dan’s Cheesy Asparagus Meat Pie

WARNING: This dish is not VEGAN, possibly NOT HEALTHY, probably FATTENING, will definitely cause cravings for SECOND helping.

After having the disclaimer in place I will say that some have asked for recipes of the food I cook on the road and at home.

(Also, please substitute the word asparagus for broccoli. Someone pointed out my mistake, thanks Linda. That’s what happens when you turn a cook into a writer). 😉

So here we go. Let me start by saying that this is what happens when I get stuck at home and hungry. I create food. I try to create food that can be cooked on the road or other alternative places. This would require the use of a dutch oven or possibly a solar oven. A friend of mine uses one and she bakes marvelous food. I will say right up front that I have not yet cooked this in either method, but past experience says it would turn out fine.

So on to it…

Lay down a layer of thin sliced beef strips, interlaced together to make slicing easier, in a deep baking dish with a lid.

Next a layer of dressing or seasoned crumbs of your choice (or what’s available).

Now a layer of shredded cheese and broccoli

AND, another layer of cheese and broccoli. When it comes to broccoli you can’t have enough shredded cheese. Just my opinion.

Now, a layer of bacon.

Finally top it with another layer of crumbs and cheese mixed together. I remembered the almond slivers after I already had this made. Those would be a nice flavor and texture touch for the top layer.

Remember my three rules of food:

  • It must look interesting
  • Smell enticing
  • Taste delicious

Cover and bake 45min @ 425 deg. Cover and bake 45min @ 425 deg.

Bake covered for 45 min at the equivalent of 400degF and then aloow to cool slightly to slice and serve.
